Homemade Garam Masala
Hello Guys ..
I know everyone likes a spicy hot pot biryani .. but in process of getting a delicious mouthwatering spicy HOT biryani , *masala* plays a very important role . We know this but yet we ignore the fact , like me :D.. and add whatever we have in our masala dabba into our biryani, not only for biryani but we do this for most rice based recipes .. but trust me with little preparation. we can make our dishes heavenly delicious and spicy. So today I am going to tell you how to make Garam masala this you can use it any dishes you cook, its like a all purpose masala but this masala is especially too good for biryani's . I use this masala in my curries, instant rice recipes, etc.
Ok, but before going into the main preparation , I would like to give some credits to someone .. so when I cook biryani I just add bay leaves, cloves, cinamon, etc stuff which I have in my masala dabba ... I always have an idea to grind them together and store it .. so that I can just directly use it whenever I am cooking, but I never did .. why ?? I am so lazzzzzzzzY :P .. But when I went to chicago to visit my sister .. she came up saying that lets make biryani masala when we are discussing about food .. and gave me some masala ( which I used it for like for 4 months ) ... and she also added some more interesting spices which I didnt know .. so yes .. she told me what ingredients to add for this masala ... so Kudos to my rocking sis .. Now lets jump into the preparation ...
Ingredients
I am just telling the ingredients and not the quantities .. because We almost added equal amounts of all ingredients in the masala .. you can just figure it out in the picture attached.
Bay leaves cinnamon Elaichi/cardamom Khus Khus or Poppy Seed Laung/Cloves Saunf/Fennel Black jeera/Black cumin Black pepper Dagad flower/biryani puvvu Mace staranise Black cardamom.
Well You see .. the above fifteen exotic spices when mixed together will you make your taste buds go crazy .. trust me .. !!
So all you have to do it just mix and make them into fine powder and add them to your biryani/other foods as per your taste .. thats it ..

Tips
1. There is no problem if you dont have some of the ingredients listed above .. still you can make good masala with the ingredients you have
2. You can find all of the above listed ingredients in Indian Grocery store.
3. You can grind coarsely or fine ... anything should be ok ..
4. Store the masala in an air tight container .. and when you open the container while using the masala make sure container is closed as soon as possible otherwise you may lose the exotic aroma of the masala while the container is opened for long time.
Believe me .... Whenever I do biryani .. my kitchen fills with seducting aroma and makes me mouthwatering and increase my hunger pangs .. !!
Please let me know after you try it and how your biryani came out .. :)
