Vegan Cauliflower Curry in Instant Pot.
Cauliflower is a low carb delicious vegetable and can be used in multiple ways. In this post I will you show you how to make vegan cauliflower curry, so simple and delicious which can be served with Rice/tortillas/rotis etc. If you are not vegan, feel free to add butter instead of oil. You can also cook this in a regular pan or pressure cooker and the result is just the same. Also adjust the spices according to your spice levels, I wanted it to be bit spicy and I added spices accordingly. Let me know if you are excited to try the recipe.
Ingredients
Oil of choice - 1-2 tsps
Mustard seeds - 1tsp
Cumin seeds - 1tsp
Red chilly - 1
Curry leaves - 1 Sprig
Onions - 1 cup finely chopped
Ginger Garlic paste - 1 spoon
Tomatoes - 3 finely chopped
Coriander powder - 1 spoon
Turmeric powder - 1tsp
Red chilli powder - 1+1/4th spoon
Garam masala - 1tsp
water - 1 cup
Cauliflower florets of 1 head
Salt to taste
Cilantro - to garnish
Method
~ Put Instant pot in saute high mode
~ Add oil and let it get hot then add mustard seeds,cumin seeds, red chilly and curry leaves, Fry well
~ Now add onions, salt and saute well
~ once onions are fried well, add Ginger garlic paste and fry well
~ Now add Tomatoes and fry till mushy
~ Add all the spice powders and fry for a min
~ Add cauliflower florets, water and salt to taste
~ Do manual 3 mins high and do quick release( after 2 to 5 mins in warm mode)
~ Add cilantro to garnish
~ Serve with Rice/Roti/Paratha and Tortillas.
