Instant Pot Spinach Mushroom Curry
Hello Guys,
I am not a mushroom fan and I don't eat them at all but my husband likes them so I often cook mushrooms at home for him. So as he requested I combined all his three favorite ingredients in the instant pot and made this curry i.e. Mushrooms, Spinach and Tomatoes. I made this curry spicy however you can always adjust the spiceness to your taste buds. Serve this delicious curry with you favorite rice or bread of choice. Tip : Use pre cut veggies to save prep time.

Ingredients
Olive Oil - 1-2 tbsps
Garlic - 2 to 3 minced
Onions - 1 chopped
Cumin seeds - 1 tsp
Tomatoes - 2 to 3 chopped
Jalepeno - 1 Big
Turmeric powder - 1tsp
Red chilli powder - to taste
Coriander powder - 1 tbsp
Garam masala - 1 tsp
salt - to taste
Spinach - 9oz chopped
Mushrooms - 8 oz sliced
Water - 3/4th cup to 1 cup

Method
~ Put Instant pot on Saute mode high
~ Add oil and let it get hot
~ Now add cumin seeds, fry and add garlic.
~ once garlic is fried well add onions + Jalapeno and saute them for few mins
~ Add Tomatoes and fry till mushy
~ Add spice powders, fry for 1 min
~ Add spinach, mushrooms, salt and water. Mix well
~ Turn off saute mode and put manual mode high 3 mins , keep vent to sealing mode
~ Do quick release or natural pressure release, I did Natural pressure release after 10 mins.
~ If it is watery , put on saute mode again and keep stirring occasionally till water gets evaporated and gets desired consistency.
~ Serve Hot..!!
